Holiday Recipes~COLTONS HUGE PUDDIN

Todays Featured #HolidayDessert #Recipe by Becky GilmanBEST EVER

COLTONS HUGE PUDDIN
Box of Vanilla Wafers

4 or 5 bananas

1-1/2 sticks butter

6 egg yolk

3 cups sugar

6tbls flour

1-1/2 teaspoon salt

1-qt half and half

1-pint whipping cream

2-cup milk

2-teaspoon vanilla
I melt butter in heavy sauce pan and remove from heat

—meanwhile I combine sugar, flour, salt.

I beat the egg yolks up and then combine the sugar mixture, butter, and egg yolks

Stirring them to a well mixed paste
Over medium heat I then add the milk products –stirring constantly until it begins to thicken.

When thickened –remove from heat and stir in the vanilla
I know this is not how Betty Crocker adds eggs but this is how I do it—LOL

As this begins to cool just a tad arrange your first layer of vanilla wafers—then a layer of banana slices, now a layer of pudding,–repeat until all is layered finishing with a layer of vanilla wafers

Holiday Recipe~Regayla’s Banana muffins

I was thumbing through Facebook today and I saw Ms Bonnie Underhills post. This recipe was her post. I thought wow that sounds yummy. Then through comments I realized there was more to this story.
This is a message from Becca Burrows “It wasn’t so much her banana muffins as her cooking! She was an awesome cook! She cooked at every camp, conference and event they had at RCC! She’s definitely missed!”

I know that there are many more memories and stories to be told about Regayla. I have only visited RCC one time for their women’s conference. I don’t know if Regayla was the one cooking that amazing food then but if so I totally agree about her cooking.

Regayla’s Banana muffins
3 cups flour. 2 1/2 cups sugar– 3/4 tsp salt– 1 tsp soda–

1 tsp cinnamon– 3eggs beaten– 1 cup oil –2 tsp vanilla

8 to 10 over ripe bananas mashed with fork! Mix bananas with other ing. Add 1 cup chopped pecans! Fill cupcake pans 2/3 full and bake 25 min. At 350. You can also bake in loaf pans
I can’t wait to try this recipe. Muffins are tradition for my kids and I for Christmas.
